Breakfast of Champions

We have all heard our entire lives that breakfast is the most important meal of the day.

I find that it is challenging to find the time to get a truly healthy, hot meal into my children so early in the morning, particularly if we need to hurry up and get out of the house in the morning.

Right now our old stand-bys are oatmeal, scrambled eggs, bagels and cream cheese. And of course we default to cold cereal way more than I would like. Everything else seems to take too long to prepare.

So I am asking all of you, what do your kids have for breakfast? Any fabulous ideas I have not yet considered?

  2. My kids love toast with creamy peanut butter. We have even tried toast with pb and bananas, with mixed reviews. They seem to be good stand bys because they can eat them on the way to the bus stop if they must. I have also done pancakes that I make and then refrigerate or freeze. In the morning, they can microwave them for 1 minute and eat. If they need to take it with them, they roll some fruit in it, as syrup is messy. It does teach them to get up int he AM if they want syrup!

  3. Something that I have found to be a nice change of pace in the morning is muffins and quick bread. I bake them the day before of course, because I wouldn’t have time to do it in the morning! :) I use recipes that are very nutritious though, otherwise those kinds of things can get very sugary! If we are buying the healthy cereals and oatmeals, just throw in some fresh fruit and it’s really a very nutritious breakfast! I often add a side of nuts/seeds to boost the protein for them a bit, or bake it into the muffins! Some of our favorite breakfast muffins are… Pumpkin Apple muffins, oatmeal muffins with whatever dried fruit I happen to have on hand that day, & Carrot muffins. The only quick bread I bake is the banana, it’s just sooo yummy! I make all the recipes with whole wheat flour, or at least half whole wheat, and throw in a few tablespoons ground flax seed, and they are vegan recipes. (We are lacto-vegetarians, and one of my daughters is allergic to dairy, so mostly everything we eat is vegan!) I hope you have good luck throwing in some variety into your breakfast routine!

  4. I saw in a magazine a fritata (sp?) that was made the day before and then sliced and placed into pita pockets. My kids loved it. The best part is that you can throw just about anything into the fritata. Great way to get rid of anything leftover. It is good on the go, too.

  5. Have you tried using your crockpot to make Morning Polenta? You use a 3-to-1 ration of Water to Polenta. Pour the polenta into a small crockpot; stir in hot water, and put on high for 30 minutes. Reduce to low for 6 to 8 hours, stir, and you’re done. The recipe suggested putting in honey or maple syrup; but we’ve used a dollop of mascarpone cheese with a little brown suger or turbinado sugar, and it’s awesome. It’s also very filling, and a great way to start your day with some protein if you use the cheese…
